-RAÍZ is produced through a carefully controlled washed process designed to preserve the expression of origin and highlight the clarity, sweetness, and elegance of Oaxaca’s coffee farms. Ripe cherries are hand-selected and sorted before depulping. The coffee then undergoes a controlled fermentation phase focused on enhancing natural sweetness, aromatic complexity, and fruit definition while maintaining a clean and balanced cup profile. After washing, the coffee is slowly dried under monitored conditions to promote stability and preserve its sensory attributes. The result is a coffee with a transparent profile, refined acidity, and a sweet, elegant character that reflects both the terroir and the care taken during processing.
