They depulp coffee cherries, put them in a tank filled with a bit of water, and give it a stir regularly to remove mucilage before letting them dry. This processing method allows them to cut down on water usage and bring out the bright, powerful flavors unique to their coffees. Heleanna learned about this processing method in Kenya. Hence the name Kenyan style.
