Coffee cherries came from farmer partners and processed by Yarsin, the main person caring for the quality of this lot. Being processed by Yarsin and Biome team at Biome Washing station, cherries are fermented anaerobically with inoculated saccharomyces cerevisiae k1 v1116 for 48-72 hours, and then spread out on drying bed for rest of drying 18-25 days until moisture is below 12%.
