Coffee cherries came from farmer partners and processed by Ms. Hnin Ei Cho, the main person caring for the quality of this lot. They process this coffee by doing pulping, followed by fermentation 24-48 hours. Then the parchments are washed before adding to the tank again to ferment second time. After second fermentation, parchments are washed again, and then drying it for 10–14 days on drying beds.
