Our purchasing agent buys from more than 20 villages in this region, and delivers cherry overnight from Ywangan to our processing facility in Pyin Oo Lwin. MCG processes most of our coffees in washed methods, but the success of our dry natural lots has led us to greatly expand dry natural production. We’ve grown from 15 raised drying beds to 100, plus an experimental greenhouse / parabolic dryer. Drying pods are always moved at least once each hour during the day, then covered at night after the pods have darkened and wrinkled. Every daily lot is cupped for quality control, by QC team & lab assistants trained in sensory skills by the Coffee Quality Institute. All clean and similar daily lots from the same source and variety are batched and stored together in our warehouse until a buyer is ready for milling. Coffee is then hulled, sized, and sorted in our Pinhalense dry mill and Buhler optical sorter. Specialty lots for export are always handsorted to meet contract specifications.
