Ojona and Le Paterique are emerging regions located in the southern part of the country. These areas are particularly compelling due to their unique microclimates. With more pronounced dry seasons, coffee cherries develop higher sugar concentrations (higher Brix levels), resulting in distinctive and expressive flavor profiles. While these regions are still developing, they hold immense potential for producing highly differentiated coffees with unique character.
