CAFESMO로부터 메일이 도착한 것은, 2022년 1월이었다. 암스테르담의 한 로스터로부터 TYPICA 플랫폼을 소개받았다고. 나는 온두라스에서 조직을 매우 잘 운영하며, 커피의 지속 가능성을 위해 착실하게 노력을 일으키고 있는 생산자들이 존재하고 있는 것에 놀라, 곧바로 그들의 샘플을 받아 보았다. 물론, 그 샘플의 퀄리티는 매우 안정적이었으며 몇몇은 감동마저 느낄 수 있는 영역에 도달해 있었다…

Natural processing. All 26-30 days in solar dryer in our Cafesmo facilities, looked after by our technical assistants. 1450 meters altitude and temperate, humid climate. Hence, the long time needed for drying. A small variation in the number of days because these lots were large and not all the coffee was dried at the same time. So, depending on the weather, drying has taken a few days more, or less, for the different parts of these lots.
