Washed

Palestina Blend is sourced from a selected group of producers located in the upper part of the municipality of Palestina, at approximately 1,700 meters above sea level. This group has established itself in the cultivation of coffee varieties such as Tabi and Caturra across an area of approximately 2,750 hectares. Due to the local conditions and microclimate, coffees from this region differ from those of the rest of Huila, showing brighter acidity, greater delicacy, and pronounced fruity notes. These coffees follow a traditional washed process in which ripe cherries are first collected and weighed, then left in the processing hopper for 24 hours. The cherries are subsequently pulped and placed in water-filled tanks, where after approximately 12 hours they are washed with two rinses. Finally, the coffee is dried either in the sun or using mechanical dryers, depending on the producer’s availability.
