Grade C is Screen 14 within the Ugandan grading system. After the hulling of the parchment at the mill, the beans are polished and screened AAA (18), AA (17), A (16), B (15), and so on. The C Grade is often the very small beans within the product that may produce a higher level of defects, which is why it is preferred in specialty coffee to keep out. However, with some care and attention - one can utilize C and might note some fantastic acidity and complexity coming through due to the smallness of the beans, similiar to the flavor profile of PB products.
