Very well harvested and sorted red ripe cherries are taken straight to the drying tables in open sun and frequently turned so as to aerate the cherries and avoid high temperature and white mould development. We start by spreading the cherries thin and progressively increase the heaped drying cherries to slow drying after 15 days. The cherries dry for not less than 25 days.
