By carefully managing microbial activity within controlled bioreactor environments, the family is able to encourage the development of delicate floral notes while preserving the sweetness and fruit character inherent to the coffee. The result is a distinctive expression of Santa Cruz de Ozolotepec—combining the terroir of Oaxaca's Sierra Sur with a precise and innovative fermentation approach that highlights elegance, fragrance, and complexity in the cup.
