Santa Cruz de Ozolotepec lies deep within the Sierra Sur mountain range, one of the most remote and dramatic coffee-producing landscapes in Mexico. Situated between 1,450 and 1,650 meters above sea level, the community is surrounded by cloud forests, steep valleys, and diverse native vegetation that contribute to the unique character of its coffees. Coffee farms are small and family-managed, often intercropped with bananas, fruit trees, corn, and other traditional crops. Bourbon, Garnica, and Pluma varieties thrive in these high-elevation conditions, developing exceptional sweetness, complexity, and clarity in the cup. The producers of Santa Cruz de Ozolotepec combine traditional farming knowledge with a long-term commitment to soil health and environmental regeneration. The resulting coffees express both the richness of the Sierra Sur ecosystem and the cultural heritage of the families who cultivate them.

-This lot is processed using traditional washed methods practiced throughout the region. Cherries are selectively harvested at peak ripeness and floated to remove lower-density fruit before depulping. Fermentation typically begins as a dry fermentation and transitions into submerged fermentation, lasting approximately 48 hours in total. After washing, the coffee is dried on woven mats spread across patios and rooftops, while some producers utilize raised African-style drying beds. Once dried, parchment coffee is stored in jute sacks to maintain airflow and preserve quality. Upon arrival at the warehouse, the coffee undergoes preliminary cleaning, sorting, and moisture standardization before being transferred to GrainPro bags for stabilization. The parchment may rest for several weeks or months under carefully controlled conditions prior to dry milling, helping ensure optimal cup quality and consistency before export.
