The Arabica De Berman Natural from Pangalengan, West Java, is crafted using a meticulous Classic Natural processing method that highlights the regional terroir. Following careful harvesting, the freshly picked whole coffee cherries are immediately transferred to drying beds without being pulped or stripped of their fruit. They are spread out in thin layers to dry under the sun, a stage requiring frequent hand-turning to ensure uniform drying and to prevent any unwanted fermentation. Over several weeks, the coffee bean slowly absorbs the concentrated sugars and organic compounds from the surrounding fruit flesh and mucilage as the outer cherry dehydrates. Once the ideal, stable moisture content is achieved, the dried husks are mechanically milled away, resulting in a complex, naturally sweet cup characterized by vibrant fruit notes and a heavy, distinct body typical of exceptional West Javanese naturals.
