The Arabica De Berman Wethull Mosto from Pangalengan, West Java, undergoes an innovative hybrid processing method that elevates the traditional Indonesian Giling Basah (wet hulled) style with experimental fermentation. After harvesting and de-pulping, the coffee cherries are placed into fermentation tanks where mosto—the nutrient- and yeast-rich fruit juice leached from a previous batch of fermenting coffee—is introduced to act as a natural sourdough-style starter. This concentrated microbial environment breaks down the sticky mucilage (the fruit layer surrounding the bean) while infusing the seeds with enhanced complex acidity, structure, and intense fruit notes. Following this distinct fermentation phase, the coffee is washed clean and briefly sun-dried until the moisture content drops to roughly 30–40%. At this semi-wet stage, the protective outer parchment is mechanically stripped (wet-hulled), allowing the bare green beans to dry rapidly directly in the open air, a step that tempers the acidity and boosts the coffee's final body, resulting in a cup that beautifully balances deep regional body with vibrant, modern sweetness.
