The Bumi Kintamani #1 (Pichia yeast) coffee undergoes a precise Anaerobic Washed process that begins by pulping fully ripe coffee cherries to expose the mucilage-covered beans. These beans are then transferred into airtight, oxygen-free tanks where a specially selected Pichia yeast inoculant is introduced to jumpstart a highly controlled, targeted fermentation. Over an extended period, the Pichia yeast dynamically metabolizes the natural sugars in the mucilage, yielding high concentrations of floral and fruit-forward volatile compounds (like isoamyl acetate) while preventing unwanted wild microbes from causing off-flavors. Once this specialized anaerobic breakdown is complete, the beans are thoroughly washed with clean water to remove any remaining pulp before being slowly dried, capturing Kintamani's signature vibrant acidity and layered tropical fruit notes with exceptional cleanliness and consistency.
