Shakiso Station, located in Udo Hadama village (kebele), Shakiso, Guji, Ethiopia, receives cherries from more than 500 smallholder farmers. Situated at 1,950–2,100 meters above sea level, it serves as an important hub for specialty coffee production in the Guji Zone. The cherries cultivated by farmers and delivered to the station include local varieties such as Badessa, Wolichu, and Kudhume, as well as improved cultivars like 74158, 74112, and 74110. The station employs 14 permanent staff and around 250 seasonal workers during harvest, ensuring equal opportunities and ethical labor practices. It has also obtained international certifications such as Organic and RFA, reflecting its commitment to sustainable production and fair trade.

Details of process:

Natural processing method involves a rigorous quality control process from the moment the beans are collected from farmers. The beans are then taken directly to raised beds, where they undergo a meticulous picking process that starts with green beans and progresses to yellow and black beans. To ensure optimal moisture content, the beans are covered when they reach around 15-20% moisture content and are stirred four times a day to remove any unwanted cherries. Once the beans reach 11.5% moisture content, they are carefully stored in our warehouse, where they await milling and transportation directly to Addis for further processing to meet export standards.
