Don Linarco has been involved in coffee from a very young age, working in farm activities throughout his childhood. However, it was in 2014, when he inherited the land from his parents, that he began working formally as a coffee farmer. From that point on, he became motivated to produce unique coffees, collaborating with different companies while learning cupping skills and gaining hands-on experience with various processing methods. Today, he produces coffee using multiple processes and is also involved in managing and processing coffee for other farms.

The ripe cherries are collected and immersed in water to remove any floaters. The mucilage is then removed, after which the coffee is left to ferment in previously fermented mucilage inside hermetically sealed barrels for 24 hours. It is then dried in canopies for 15 days and finally left to stabilize for an additional 15 days.
