María Belén is the daughter of second-generation coffee farmers. She has been involved in coffee work from a very young age, engaging in various tasks, and for the past 25 years she has focused on cultivating and maintaining her own crops. In 2008, she received training as a cupper at an advanced training institution in Pitalito. This training allowed her to focus more deeply on exotic varieties, and about five years ago she began actively working with different processing methods.

The ripe cherries are collected and then submerged in water to remove any floaters. They are fermented in bags for 36 hours, mechanically pulped, and then dry-fermented in an aerated tank for an additional 36 hours. After being rinsed twice, the coffee is finally dried in a marquesina (a covered drying structure) for approximately 15 days.
