This is a batch of Supremo Blend sourced 100% from members of the Cadefihuila cooperative, which has 3,500 members operating across 28 municipalities in the department of Huila. The cooperative brings together a significant group of small-scale coffee growers in the region, most of whom own between two and three hectares of land. This structure ensures that the coffee is properly processed, as most growers work with their families and are directly responsible for harvesting, processing, and coffee drying. These coffees follow a traditional washed process in which ripe cherries are first collected and weighed, then left in the processing hopper for 24 hours. The cherries are subsequently pulped and placed in water-filled tanks, where after approximately 12 hours they are washed with two rinses. Finally, the coffee is dried either in the sun or using mechanical dryers, depending on the producer’s availability.
