Coming from the region of Huila (Which means Luminous Mountain in indiginous language), Los Volcanos is comprised of lots surrounding the Nevado del Huila- the highest volcano in Colombia at 5,364 masl. Finca Las Brisas, located in Santa Maria, Huila, Colombia, is managed by Paulino Quintero. At 1,780 m.a.s.l., the 2-hectare farm grows Caturra, Colombia, Castillo, and Pacamara varieties, each processed and evaluated separately. Paulino employs unique fermentation methods, including cherry and de-pulped stages, with specific protocols for Castillo. As part of "Productores del Futuro," Paulino enjoys a close relationship with The Coffee Quest, benefiting from higher prices and educational programs. Finca Las Brisas is also a hub for experimentation with fermentation processes using yeasts and microorganisms to enhance coffee quality, especially for challenging varieties. Committed to sustainability, Paulino uses an eco-washer that drastically reduces water consumption and works with The Coffee Quest's agronomist to compost organic waste for better plant nutrition. His dedication exemplifies the future of coffee: "With smart management, my small farm provides for my family and fulfills my passion."
