Prepared using over 98% red ripe cherries collected from high-altitude plantations. The cherries are cleaned and undergo anaerobic fermentation in polypropylene bags for 48–72 hours, then sun-dried for 15 days in shaded cocoons. This process results in some of the finest coffees from Timor-Leste.
