Prepared from dry parchment collected by agents from farmers. Due to limited access to water, the parchment is not fully washed, resulting in slight fruity notes. The coffees are hulled while still moist and then carefully sun-dried over 4–5 days. This process is similar to that used for Indonesian Mandhelings, contributing to a pleasant complexity in flavor and body.
