Anaerobic Natural
Antonio’s work with the “Arcoiris Process” began after he attended a course in 2022 focused on coffee processing and experimental fermentation methods. After the cherries are harvested, they are packed in clean sacks, each containing no more than 100 pounds, and sealed to minimize oxygen exposure. The cherries then undergo anaerobic fermentation at a controlled temperature of 25°C for 48 to 54 hours. After fermentation, the cherries are spread out on raised African beds to dry for 17 days. Once drying is complete, the pods are hulled and stored until they are ready for processing at the dry mill.
