HONEY process has been perfected in Central America. Coffee is basically pulped but some part of the PULP remains on bean. As coffee is then Transported to the Elevated African Beds, depending on the amount of Mucilage that remains on the Bean, the Colour of this mucilage will change during Drying. RED HONEY is produced when there is ENOUGH mucilage, to produce this colour
