Anaerobic Natural
Initially in the Natural Anaerobic process, we carefully select fully ripe red cherries, which are then placed in a tanker filled with water to separate any floaters. The cherries are then handpicked to ensure that only the fully mature ones are retained. Subsequently, we place them in a plastic barrel with no air, fitted with a gas discharge valve. Depending on the prevailing weather conditions, we let them rest for a period of five to six days. Finally, the cherries are moved to an African bed with shade, where they are allowed to dry slowly.
