Cherries are harvested and then taken to the de-pulper, after the coffee is de-pulper, hand sorting of parchment and cherries takes place on a small area, and any defects or cherries are removed for re-de-pulping discarded. All parchment is put into a fermentation tank for 24 hours after they add water to remove all floaters. Once the parchments are washed the coffee is moved to the drying tables for 30 days.
