The processing method for cherries involves a systematic approach to ensure quality and consistency. The cherries are hand-picked and sorted within 8 hours of harvest to ensure maximum freshness. They undergo a 24-hour fermentation dry process in an open-air tank, followed by de-pulping.After de-pulping, the cherries are soaked for 12 hours in clean water before they are transported to African-raised beds for drying. This method ensures that the cherries retain their natural flavour and aroma.
