Details of process:

Cherries are sorted first in the field, then delivered to the washing station for de-pulping (de-pulping happens during the evening), an open fermentation process of 12 to 13 hours start, well fermenting they turn the coffee to check the fermentation level, before washing and grading to separate P1 P2, and floaters, drying time on the beds are about 13 to 16 days, depending on the weather until parchment gets to 12% moisture content on the bed before going to the dry store.

Since last season, we are implementing several measures to improve the quality of our coffee. We are closely monitoring every step of the process, from farm picking to dry storage. In addition, we are only allowing fully ripe, shiny red, and dark red coffee cherries to be sent through the pulping machine. These efforts will ensure that we deliver a high-quality product to our customers

The increased mucilage on the cherries this year has significantly contributed to the improvement of Tembo Tembo's quality. The effective management of the post-harvest program has also played a crucial role in the success of this year's harvest. As a result, we are able to observe the notable improvements from the previous year.
