Details of process:

Cherries are sorted first in the field, then delivered to the washing station, cherries are de-pulping using very little water, a small table is used to drain excess water, then moved to the raised beds, parchment is spread into a thin layer until 15% moisture contents is reached, then parchment is left to dry in a thick layer about 2 and a half inch ( that turns frequently ) total drying time is about 16 to 19 day.

Since last season, we are implementing several measures to improve the quality of our coffee. We are closely monitoring every step of the process, from farm picking to dry storage. In addition, we are only allowing fully ripe, shiny red, and dark red coffee cherries to be sent through the pulping machine. These efforts will ensure that we deliver a high-quality product to our customers
