Timely and selective picking of bright red cherry, with no green and under-ripe berries, is done at Gachenge estate. Cherry is then transported to the factory in clean bags on the same day of harvesting. It is then spread on clean floor and the green, under/over ripe, dry, insect infested/diseased berries, twigs, leaves and any other foreign materials such as stones that may have been picked are removed. Sorting and weighing is then done, coffee is pulped and afterwards, dry fermented for 16 to 23 hours and washed in clean water to remove any remaining mucilage. Parchment is soaked for 12 hours and then transferred to raised beds where it sundries for 14 to 21 days. As it dries, parchment is turned regularly to ensure even drying.
