The coffee cherry is harvested only with a high level of ripeness. The coffee is washed, and put in barrels and then immersed in water and at that time is inoculated with Koji, let rest in the barrels uncovered for 24 hours then proceed to dry in African beds, this process is done in the shade with a high relative humidity so that the fungus can proliferate and the beans become completely white. after 2 days we proceed to dry in direct sunlight for 21 days in natural process. The Koji used in this lot was bought in Japan when Hidardo and Sebastian from CAFESMO visited Japan for the TYPICA Annual Meeting and SCAJ 2022.
