The washed coffee process begins by gathering red cherry coffees from farmers in the late afternoon. These cherries will be carefully weighed and meticulously hand-picked to eliminate any unripe cherries. The next step will be to pulp the cherries. Following this, the coffee will undergo a 48-hour fermentation process to extract the mucilage. After this process, the coffee will be washed and subsequently transferred to an African bed for drying. Depending on the weather, the drying period could take up to 21 days.
