Cherries are hand-selected and anaerobically fermented in bags for 40 hours at 16-18°C, then oxidized for 20 hours. Fermentation resumes for another 12-18 hours before a thermal shock with 32°C water and mosto (coffee juices from fermentation). Cherries are solar-dried for 16-25 days, until 16% moisture content, then rested in plastic bags in a dark room for 48 hours before finishing the drying, ultimately reaching 11% moisture content.
