Cherries are harvested above 18% brix. The cherries are soaked in water 2 hours removing floater beans. Initially cherry was fermented by 96 hours collecting mossto. Cherries was pulpe, ferment and macerated by 96 hours addicing citric mossto 3/100. Then the beans was ferment 36 hours sumerged at 30% with dehydrated fruits ending with a Red Honey process.
