Honey
The cherries were hand picked with 23 degrees brix. The cherries are fermented in a closed environment without oxygen for a first Carbonic Maceration. Extracting the mosto 48 hours and the cherries are pulped up to red honey level. The mosto is brought to a 100% lactic level, this is put into second Carbonic Maceration in a ratio of 2 liters per 200kg. Finally, the pulped coffee with the mosto is mixed with fresh fruit, dehydrated fruit and natural sugar to extend fermentation more than 48 hours. Then the coffee is taken to the greenhouse for 100% sun drying.
