Finca La Loma, a 12-hectare farm under the management of Rodrigo Sánchez's Aromas del Sur, has been cultivating high-quality coffee in Huila since 2011. In 2017, Rodrigo expanded the farm's infrastructure by building a cupping lab on La Loma, designed to help with crop evaluation and improve the consistency of their coffee quality. The lab overlooks the lush valley, offering both a functional space for coffee analysis and a stunning view of the farm and surrounding landscape.Through his work at Finca La Loma and other farms, Rodrigo has pioneered a new approach to coffee farming, blending traditional practices with innovative fermentation techniques inspired by his interest in wine and craft beer production.
