After picking the cherry and dipulping first goes to the fermentation tank for about 20h、then wash the coffee and then put in the small tank again for another 48h in the water, they change the water in the tank 3 times a day, after that the coffee goes to drying process. he thinks this double washed or kenya process makes the coffee taste more clean and also the ammount of water he needs is less than the traditional washed process.
