Lactic washed: a fermentation process utilizing winemaking technology. The bean is pulped and placed in egg-shaped concrete tanks, sealed and subjected to a vacuum. This process fosters the development of lactic bacteria, “lactobacilli,” proven to enhance fruity notes and accentuate characteristic flavors of the beans we work with. Fermentation lasts for approximately 3 days. Subsequently, filtered water is added to cover the beans for 24 hours before the coffee undergoes a washing channel process, followed by drying on African beds.
