Fully Washed - In the Fully Washed process, after harvesting, the fruit goes through the wet mill, where it is washed, separating the floating fruits from the ripe and green ones. The ripe fruits are then sent to the pulper, where the skin is removed while preserving the mucilage. Subsequently, the peeled fruits go into a tank for immersion in water for 36 hours to remove the mucilage. Afterward, they are washed and taken to the raised drying on African beds. The drying process on the African beds occurs slowly and continuously, ensuring a higher sensory quality for the coffee beans by reducing the risk of cell rupture during water drainage. All batches from Eldorado undergo an intermittent resting period before being processed, which extends their shelf life.
