The journey begins with carefully selected, ripe coffee cherries that are pulped and placed into sealed, oxygen-free tanks where a targeted inoculant of Saccharomyces yeast is introduced. This precise fermentation environment allows the specialized yeast to break down sugars over a controlled period, producing complex aromatic compounds and a clean, lively acidity.
