In this process, the most important factor is ensuring that the fruits coming from the farms have reached full maturation (100%). Once the product arrives at the mill, the drying process begins immediately to prevent unwanted fermentation. The drying process continues until the moisture content is reduced to 10.5%. Pre-drying is done using a static dryer for approximately four days until the fruits can be managed into the dynamic dryer without being damaged, reaching a moisture content of 10.5%. The product must be allowed to cool to room temperature before being bagged and moved to the store for the resting process. The final flavor profile of the coffee can be modified by managing and controlling the fermentation level during the drying process.
