Processing system reduces the amount of water by 90%, making it more environmentally friendly. Quality is also a top priority throughout the process. The first step is density separation, using ecological module, where the immature fruits are separated from the ripe ones in the "green separator." Red riped cherries are depulped, the wet parchment is screened to check for defects, and the coffee is then sent to the dry mill to reduce the moisture content to 11.5%, using natural sunlight or mechanical dryers.
