The selected cherries are washed and go to depulping. Then, it’s set in a regular pit or “pool” for 12-20 hours for fermentation, depending on the temperature. Hot temperature will make the process shorter, cool temperature will make the process longer. When the mucilage starts to become loose, they distribute the coffee in a washing channel (every six hours they spread water, making sure that ph goes lower than 5). This process will happened 3 or 4 time and when the mucilage is completely loose, cherries are washed and sent to the mill. The word "Laurel" comes from a farm in honduras. The farm "El laurel" did a similar processing when they won the COE.
