Natural - The pre-cleaning of the coffee is carried out without the use of water to maintain the coffee's microbiota, enhancing the expression of terroir and variety in the sensory profile of each lot. After pre-cleaning, the coffee is taken to the concrete patio. On the patio, the coffee is managed using the folding system without stirring in the initial days, until the loss of free water and homogenization of the beans. After seven days on the patio, reaching 25% to 28% humidity, the coffee is taken to a static dryer, where we perform intermittent drying. This way, the coffees dry during the daytime and rest during the night, aiming to homogenize the moisture content of the beans. The coffee spends an average of two weeks in the static dryer, at a maximum temperature of 35ºC. After drying, the lot is stored for at least 20 days before the final cleaning stage of the batch.
