Selective manual harvest. Controlled natural fermentation in big bags for 108 hours. The drying process took place on cement patios until 18% humidity, using the volcano method, being continuously monitored and raked when necessary. Then it was taken for an intermittent phase of about 20 days in a climate-controlled environment, and later returned to the patio to finish drying.
