Manual harvest. In the wet methods, the coffee was simply washed and taken to the patio. Fermentation took place on the patio using the “Toblerone” method, in which a swath is piled facing the sun, and left to ferment for 48 hours. The temperature of the mass reached 35 degrees. After 48 hours, it was spread and drying was done in a thin later.
