Manual harvest. In the wet method, the coffee was simply washed and taken to the patio. On the patio, we mixed in lemongrass. After mixing, the fermentation method used as the “Toblerone,” in which a swath is piled facing the sun and left to ferment for 48 hours. The temperature of the mass reached 38 degrees. After 48 hours, it was spread and dried in a thin layer.
