Paradox - Paradox utilizes a unique, linear fermentation process that showcases both complexity and precision. We start with a pulsed-vacuum natural process, which primes the coffee for an extraordinary journey. Next, the extracted liquids from the bioreactor are transformed into a special amazake blend, crafted with koji rice and cascara from the same varietal. This mixture is then fermented and reintroduced to the bioreactor, allowing for deeper flavor development. Finally, the coffees undergo meticulous drying under shaded conditions, preserving every nuanced flavor.
