By exploring beyond standard methods like carbonic maceration, we discovered that using pressure—especially intense negative pressure—unlocks unique flavors while preserving the essence of each varietal. This approach involves subjecting coffee cherries to negative pressure in a bioreactor for 3 days, accelerating fermentation for complex flavors. Afterward, the beans are shade-dried at atmospheric pressure to enhance their profile, yielding a distinctive and innovative cup.
