Manuel is a very quality driven small scale producer, mainly producing variety Java in their 3ha farm. They pay to the pickers about double higher salaries than average to be able to have same people every year and to improve picking quality.(120 boliviano/$1,3 per 1 backet 14kg) By using the smaller tank to wash and process the coffee, they managed to reduce the amount of water it takes to produce the coffee which became crucial due to this year's weather conditions in Bolivia.(2L of water - 1kg of coffee) Improved the fermentation process by using anaerobic technic 10-11h to enhance the fruity notes. Very stable and controlled drying process in the drying tent using 2 levels of drying bed ( 8-10 days) Planting more shade trees in the farm to be sustainable and stronger farm against climate changes.
